Dave Lamason, formally of Peoples, opened up Wellington’s only coffee house where siphons as the star. A dramatic way to drink coffee involving an open flame, reverse pressure and spot cooling. WOO SCIENCE! Siphon coffee is a very clean way to drink the black gold and Dave is just a lovely guy, friendly and approachable.

I’d hardly call myself a regular here, I manage a trip about once every month, but the staff always seem to remember my order. It’s a level friendliness and efficiency that’s so good it’s almost inappropriate. It’s difficult to make a case for Wellington’s best coffee, everyone’s individual loyalties lie in a particular place, but what is certain is that the staff here know what they’re doing. Owned by Dave Lamason, brother of People’s Coffee founder Matt Lamason, they were one of the first cafes in Wellington to embrace the Chemex. They offer a range of single origins, as well as espresso blends. Tucked beneath the Lombard car park, it can get busy at times, but never too loud to inhibit a nice, solitary sit down.

I'd read quite a bit about Lamason before popping along to grab coffee and meet some colleagues.  I'll admit to being pretty sceptical about filter coffee (remembering the bad old days of the Bodum from the 90's), but really enjoyed the coffee and the vibe of Lamason. The staff were friendly, the location is interesting (being down a laneway) and the coffee was actually really good.  There's a simple assortment of counter food, and the team said that they had plans to extend the range of food next year.  Well worth a visit.
